Did you ever imagine finding a meat free alternative to the iconic “Croque Monsieur” ? Well, it turns out, we finally have one. The Kimchi Cheese Peanut Butter toast and trust us, everything about this sandwich is SO DAMN GOOD.
Hot kimchi, crunchy peanut butter, grilled cheddar and young onions all sandwiched together between two slices of garlic chilly buttered sourdough bread. How does it sound? Mouthwatering right ?
This is the ultimate easy meal recipe if you’re following a meat-free diet and looking for a comfort grilled cheese recipe. Peanut butter and grilled cheese is the ultimate easy meal as it takes only 15 minutes in total, requires little to no chopping and just a skillset or a sandwich maker.

WHAT YOU'LL NEED

  • 4 thick slices of Sourdough Bread
  • 4 slices of Cheddar or one cup of grated cheddar
  • 1 cup of Kimchi (roughly chopped)
  • 1 cup of Crunchy Crunch Peanut Butter
  • 1 Garlic Glove (grated)
  • Sesame Seeds
  • Chilli Flakes
  • 30 g of Butter

For serving:

  • Chili Flakes
  • Fresh Chives
  • Salt

PREPARATION

  1. In a small cup, mix together the butter, chilli flakes, sesame seeds and the garlic.
  2. Chop the young onions in small bits.
  3. Spread the thick slices of sourdough on the external part of the bread with the garlic butter.
  4. Spread the inside half of the bread with a generous portion of Drive Me Nuts Crunchy Crunch Peanut Butter, kimchi, young onions and finally add a layer of cheddar cheese. Add the top of the bread with the garlic butter facing up.
  5. Place the toast on a skillset and cook each side until golden (about 3 minutes per side). If you have a sandwich maker, it is even better; just press for 4 to 5 minutes.
  6. Top with chilli flakes, chives and sea salt.
